The Rigahaus senior citizens’ centre is embedded in the middle of Chur in a nature park certified by the Natur+Wirtschaft foundation. This is a commitment. Thus, the management pursues a consistent sustainability strategy. Gastronomy is an important pillar of this strategy. The focus is on short regional supply chains and a seasonal menu.
Since April 2021, the senior centre has gone one step further in its sustainability. Every Thursday, from breakfast to lunch to dinner, meat products or products containing meat are completely eliminated. Even the popular salami sandwich is not offered. Gerry Rauch, head chef at the Rigahaus senior citizens’ centre, estimates that Veggieday saves more than 400 kilogrammes of meat in a year.
